Chicken and mushroom pie

Vous avez besoin de :
  • 2 ready-made puff pastries
  • 170 grams cooked chicken (leftover rotisserie chicken works great!)
  • 225 grams leeks
  • 250 grams pink oyster mushrooms
  • 2 slices streaky bacon, cooked
  • 1 shallot
  • 1 onion
  • 20 cl double cream
  • 1/2 chicken bouillon cube
  • Pinch each of thyme, parsley, paprika, and nutmeg
  • Salt and pepper
  • 2 tbsp olive oil
  • 1 egg yolk (to brown the top)
  1. Preheat oven to 200°C/400°F/Gas mark 6.
  2. Peel and chop the shallot and onion. Sauté over medium heat in one tablespoon olive oil and a pinch of thyme and parsley. Add the sliced mushrooms and cook 5 minutes. Add the (cooked) chicken and bacon and set aside.
  3. Cut the leeks into rounds and sauté in one tablespoon olive oil for 4-5 minutes over low heat. They should still be slightly firm. Add half of the cream, mix, and let simmer 2 minutes.
  4. Combine the leeks with the onion/chicken/bacon mixture and let simmer for 4-5 minutes. Add the rest of the cream and the bouillon cube. Season with a pinch of grated nutmeg and a touch of paprika. Salt and pepper to taste. Remove from heat and set aside.
  5. In a pie dish, press the first puff pastry into the bottom and prick with a fork. Add the filling, and ocver with the second puff pastry. Join and fold the edges together.
  6. Tip: open the center of the top pastry and insert a small roll of parchment paper to help the pie “set.” A little liquid could come up this “chimney” during cooking.
  7. Spread the egg yolk over the top crust to help it brown. Place the pie in the oven and cook for 40 minutes.
  8. Serve warm with a side salad.
